    My story began over 30 years ago when I created my first cake for my son, starting off simple with a few small designs. From then I was hooked on cake decorating and chocolate!

    I worked in the cake decorating department at the world-famous Yorkshire Betty's Bakery and tearoom where I was team leader for over 10 years. I have worked in many different roles over the years, picking up skills and experience which I am now putting to use in my own style. 

    I first joined Ampleforth Plus in 2016, training adults and young people with autism and learning disabilities in everything from tempering to the fine art of hand decorating.

    North Yorkshire was a large part of my childhood, I visited regularly with my four sisters, two brothers and grandma in tow! So working here, in the Howardian Hills is a dream come true.

    Oliver started volunteering at Ampleforth Plus in 2015 for 1 day a week, experiencing the daily horticultural tasks which changed depending on the season.

    This included propagation of seeds/cuttings, plot creation, grass cutting/strimming, installation of rabbit fence and planting of trees and hedging.

    In 2016 Oliver increased his hours to two days a week and then onto becoming a paid member of staff. He is now considering a number of qualifications including RHS Level 2 and spraying certificates.

    My passion for chocolate started when I lived in Venezuela for seven years. To be able to visit the cocoa plantation and to experience the true process of seed to bean was truly amazing. South America is one of the best producers of selected cocoa bean and it was definitely a good start to the world of chocolate. I started my training in chocolate and patisserie with Callebaut and Cocoa Barry and never looked back. Of recent, I attended training with Martin Chiffers/Ruth Hinks of World Chocolate Masters on competition chocolate pieces and it was the most exhilarating experience.

    I have worked at Ampleforth Plus for just over a year now and loving every moment.
